You may think that by seeing the maximum extent of the damage, you will get the most money from your insurance company, so you hold off on remediating any damage.

On the contrary, the insurance company may not send an adjuster out to inspect the damage until some of the damage has been removed, and it is safe to be in the space. Start the cleanup process as soon as you can.  You should document any cleanup that you do, so that you are fairly compensated for your loss and efforts.
